03 — Why it tastes different
Sliced by hand,
on a wheel.
A flywheel slicer turns slowly and doesn't heat the meat, so the fat stays soft and the slice stays whole. It takes longer. That's the point.

Split warm, filled generously, cut in half and handed over in paper. Eat it on the step outside before it gets home.
